СУЧАСНІ ТЕНДЕНЦІЇ ВИРОБНИЦТВА ТА ПЕРЕРОБКИ МОЛОКА В УКРАЇНІ
У статті проаналізовано динаміку показників виробництва та переробки молока в Україні, досліджено тренди, проведено кореляційно- регресійний аналіз. Визначено, що однією з основних проблем галузі є відсутність ефективних механізмів взаємодії між виробниками і переробниками. Проведено оцінку сильних та слабких сторін диверсифікації та контрактних відносин. Розглянуто варіант кооперації для малих виробників як альтернатива виходу на прямий контакт з переробниками.

В статье проанализирована динамика показателей производства и переработки молока в Украине, исследованы тренды, сделан корреляционно-регрессионный анализ. Было определено, что одной из основных проблем отрасли является отсутствие эффективных механизмов взаимодействия между производителями и переработчиками. Проведена оценка сильных и слабых сторон диверсификации и контрактных отношений. Рассмотрен вариант кооперации для маленьких производителей как альтернатива выхода на прямой контакт с переработчиками.

I.A. Volovyk. Modern trends of milk production and processing in Ukraine. The paper’s object and aim is to study and summarize current trends in the production and processing of milk in Ukraine, to define the system links in the industry and to review the basic models of partnership between producers and processors of milk. Research methods: dynamic series analysis, correlation, regression, SWOT-analysis. Results of the research. The reality of Ukrainian agribusiness confirms that communications between the processors and producers of milk are not suitable, ineffective. Each of the participants in the system has a different "weight class" according its negotiating positions but the most vulnerable are the producers of milk. The paper suggests the dynamics of milk production and processing indicators in Ukraine: the volume of milk production reduces annually by an average of 422 thousand tons; the amount of cows had reduced by 6.3 million cattle from 1990 until 2015; but the productivity of animals had increased more than 60%. Correlations shows that neither volume of production no price influence the profitability of milk production. The volume of milk and fresh chees processing has increased, and the butter and cheese production in Ukraine has decreased. It was determined that one of the industry's major problems is the lack of effective mechanisms for cooperation between producers and processors. The contracting farming and diversification are the models of integration for milk production and processing. Both of them has strengths and weaknesses. Conclusions have been made that contracting farming is effective for partnership between processors and big industrial milk enterprises. Diversification needs very expensive investments in equipment and marketing. Milk cooperatives is an alternative for small producers and households to be in the direct contact with the processors. The results of the paper can be used for further research in the field of agricultural service cooperatives development and for modeling of integration process in milk production and processing of Ukraine.
