ОПТИМІЗАЦІЯ КОМЕРЦІАЛІЗАЦІЇ НОВИХ ПРОДУКТІВ У FOODTECH-ІНДУСТРІЇ: ІНТЕГРАЦІЯ CUSTOMER DEVELOPMENT У МОДЕЛЬ NPD В УМОВАХ ВОЄННОГО ЧАСУ ТА ТРАНСФОРМАЦІЇ УКРАЇНСЬКОГО РИНКУ

 

У 2022–2024 роках український ринок харчових технологій зазнав безпрецедентних потрясінь: реальні доходи домогосподарств скоротилися на 30–40%, понад 8 мільйонів українців були вимушені залишити свої домівки, а частка вітчизняної продукції у споживчому кошику зросла з 67% до 84%. Ці умови виявили системні недоліки традиційних підходів до розробки нових продуктів (NPD) та сформували гострий запит на швидкі й малобюджетні інструменти валідації гіпотез. Мета дослідження полягає в оптимізації процесу комерціалізації нових продуктів у галузі харчових технологій шляхом інтеграції трьох типів споживчих інтерв'ю в оновлену модель NPD, що забезпечує точнішу відповідність очікуванням споживачів та зменшення ризиків ринкового провалу в умовах воєнного часу й постконфліктного відновлення. Дослідження поєднує структурний аналіз трансформацій українського ринку харчових технологій (2022–2024) з якісним аналізом кейсів п'яти компаній  та емпіричною апробацією запропонованої моделі на функціональному молочному продукті — сирі за адигейською технологією, збагаченому водоростями Чорного моря. Три типи CustDev-інтерв'ю — проблемне, глибинне та валідаційне — інтегровано у чотириетапну структуру NPD і перевірено на всіх фазах розробки.

Виявлено три структурні трансформації ринку: зміщення споживчих пріоритетів від преміумізації до функціонального прагматизму; прискорена локалізація виробництва; цифровізація каналів збуту, що зробила фотопривабливість упаковки та онлайн-контент основною точкою контакту продукту зі споживачем. Аналіз кейсів показав, що Наша Ряба завдяки глибинним інтерв'ю вийшла з продуктами швидкого приготування до виникнення тренду на рівні категорії; EZY Food запустила валідований MVP за шість тижнів; Sushiya адаптувала меню під доставку; Lactalis Ukraine скоротила цикл NPD з 18 до 9 місяців; AgroFuture ідентифікувала внутрішньо переміщених осіб як окремий сегмент з підвищеною відкритістю до нових форматів. Апробація на продукті з водоростями підтвердила необхідність сегментованого позиціонування за віковими групами та виявила критичний недолік упаковки до виходу на ринок.

Запропонована CustDev-інтегрована модель NPD з воєнно-специфічними критеріями оцінювання та типологічно диференційованою системою трьох інтерв'ю є ефективним операційним інструментом комерціалізації нових продуктів в умовах трансформації українського ринку.

Sysoieva S. I. Optimization of new product commercialization in the foodtech industry: integrating Customer Development into the NPD model under wartime conditions and Ukrainian market transformation.

Subject of study. The subject of the study is the influence of consumer interviews on the effectiveness of key NPD stages and the final commercialization of new products in the foodtech industry under conditions of Ukrainian market transformation in 2022–2024.

The aim of the study is to optimize the process of new product commercialization in the foodtech industry through the integration of three types of consumer interviews into an updated NPD model, enabling more precise alignment with consumer expectations and reducing the risks of market failure, particularly under wartime conditions and in the context of post-war recovery.

Research methods. The study combines structural analysis of Ukrainian foodtech market transformations (2022–2024) with qualitative case research across five companies and empirical approbation of the proposed model on a functional dairy product: an Adyghe-technology cheese enriched with Black Sea seaweed. Three CustDev interview types — problem, in-depth, and validation — were integrated into a four-stage NPD framework and tested across all development phases. Additional methodological instruments include empathy mapping, persona development, customer journey mapping, and crisis consumption pattern analysis.

Results of work. Three structural market transformations were identified: a shift in consumer priorities from premiumization to functional pragmatism; accelerated production localization, with the domestic product share growing from 67% to 84% in 2022–2024; and digitalization of sales channels, making packaging photo-appeal and online content the primary product-consumer touchpoint. A typology of three interview functions was established: the problem interview identifies whether a pain point is acute enough to warrant a paid solution; the in-depth interview reveals consumer context, values, and latent needs; the validation interview tests whether the value proposition is communicated convincingly in actual materials. Case analysis produced five distinct outcomes: Nasha Ryaba applied in-depth interviews across regions, enabling pre-emptive market entry with quick-preparation formats before the trend emerged at category level; EZY Food used problem interviews with volunteers and military personnel and launched a validated MVP within six weeks; Sushiya applied validation interviews revealing that delivery adaptation outperformed new dish creation; Lactalis Ukraine parallelized technological trials and consumer testing, cutting the NPD cycle from 18 to 9 months while identifying latent demand for compact vitamin-enriched child-nutrition formats; AgroFuture found that internally displaced persons showed significantly higher openness to new product formats — a non-obvious segment insight unavailable through secondary data. Approbation on the Adyghe cheese with seaweed confirmed that segmented positioning is required by age group: younger consumers (10–29) respond to local identity messaging, while older consumers (50–69) respond to specific functional claims. Validation interviews revealed a critical packaging gap corrected before market launch.

Scope of application of results. The results are applicable to foodtech companies, food startups, and product teams engaged in new product development under conditions of market instability, crisis-driven consumer transformation, and post-conflict recovery. The proposed model is equally relevant for attracting grant financing, as documented CustDev methodology serves as evidence of verified market demand required by international donor organizations and investors.
